Domestic Girl: Avocado Lemon Quinoa Salad

I’ve been trying to do this eating healthy thing but I have one rule. I’ll eat healthy things as long as they don’t taste disgusting. Yesterday I really tested my domestic skills by making an avocado lemon quinoa salad. And let me tell you IT WAS SO DELICIOUS IT SHOULD BE ILLEGAL.

I found the recipe on Pinterest a while ago and decided to give it a go. It only took me about half an hour (and most of that time was just the quinoa cooking).

Things you need for the actual salad: quinoa, vegetable broth, garbanzo beans, cherry tomatoes, spinach, cilantro, onion, and garlic cloves.

Things you need for the dressing: juice from 2 lemons, lemon zest, dijon mustard, olive oil, sugar (which I used instead of the agave nectar because really who the hell knows what that is), cumin, salt and pepper.

Check the recipe I used for all of the proper amounts of everything. Or just free ball it. Your call.


In a nutshell, you basically dice up all the veggies and put them in a bowl. Cook your quinoa, let it cool and then put that in the bowl too. Then whisk up all the ingredients for the dressing and mix it all together. Done and enjoy!

You won’t be able to stop eating it. I’m serious. It’s that good.
